What it replaces
A box grater takes up a shelf and has four sides you don’t use. A food processor is five parts to wash for a spoonful of zest. This is one wand in a drawer that does the small jobs — which, on most evenings, are all the jobs.
Zest stops where the bitterness starts
The flavour of a lemon is in the coloured skin; directly under it is the white pith, which is bitter. Teeth this fine take the colour and stop. Thirty seconds for a whole lemon, nothing to trim afterwards.
Why cheese comes off differently
Hard cheese shears into light ribbons instead of hard little granules. On hot pasta that is the whole difference: ribbons melt on contact, granules sit on top. The same blade does garlic, ginger, nutmeg and a block of dark chocolate over a dessert.
Built to be leaned on
The sides curve, which makes a thin sheet of steel rigid. Without that, the blade flexes under a block of parmesan and starts skipping. The handle is soft and non-slip, because this is a tool you use with one wet hand holding a bowl.
Not the right tool if…
You want a bowl of shredded cheddar for a bake, or shredded carrot for a salad in any quantity. Fine teeth are the wrong tool for volume — that is what our coarse grater is for. This one is for zest, hard cheese and the aromatics.
Registered, it carries our lifetime warranty. Two minutes, and it’s ours to replace.
