Why salt mills fail
Salt is corrosive and it is hygroscopic — it pulls moisture out of the air. A steel grinder in a salt mill rusts, and then it binds, and then the mill goes in the bin. Ceramic burrs do not corrode at all, which is the single thing that decides whether a salt mill lasts a year or a decade.
Coarse or fine is a real choice
Coarse salt on a steak and fine salt in a dough are not interchangeable, and the same is true of pepper: coarse cracked pepper on a plate, fine ground into a sauce. The nut on top adjusts the burr gap, and it stays where you set it.
Glass, so you know
An opaque mill is empty exactly when you need it. These are 6 oz glass, and the level is visible from across the kitchen. Refilling is a cap off the top, not a disassembly.
Not only salt and pepper
Dried chilli, coriander seed, mustard seed, dried garlic — anything brittle enough to crack. Not soft spices, and not anything oily: they clog any mill.
Not the right tool if…
You want one mill rather than a pair, or an electric one. This is a two-piece manual set — the kind that sits on a table and gets used at it.
