Temperature is the difference between a roast that’s juicy and one that’s dry, and between chicken that’s safe and chicken that isn’t. An instant-read thermometer takes the guesswork out in a couple of seconds — for meat, bread, oil, sugar work or a baby’s bottle. Look for a fast read time, a probe thin enough not to leave a hole, and a display you can actually see when you’re leaning over a hot oven.
