The problem with a cotton mitt
A damp cotton mitt conducts heat almost immediately — grab a wet roasting tin and you feel it through the glove in a second. Silicone does not absorb water, so a splash of stock or a wet dish changes nothing about how well it protects you.
Where people actually get burned
Not on the palm. On the inside of the forearm, against the top of the oven door or the shelf above, reaching for something at the back. The sleeve here runs 15.1 inches, which covers that.
Grip, because dropping it is the other risk
The outer surface is textured silicone. A smooth mitt slides on an oiled tray or a glass dish, and a tray you cannot hold is more dangerous than one that is hot. This grips both.
They also wipe clean
Silicone does not take a stain the way fabric does. Grease wipes off rather than settling in and going dark, which is why cotton mitts look retired long before they are.
Not the right tool if…
You want fine dexterity — picking up a small ramekin or turning something delicate. A mitt is a mitt. For precise work a folded towel or a pair of tongs beats any glove.
